NV Coombe Sparkling

A bright and lively sparkling from a blend of premium, estate grown Chardonnay and Pinot Noir fruit. The wine shows lifted citrus and white acacia on the nose, with a full, balanced palate of golden apples, macademia and hints of toasty brioche. A gentle, creamy mousse leads to a long finish.

The biologically farmed Syme on Yarra Vineyard is located on the Gruyere – Seville East border in Victoria. The ‘Glory’ part of the vineyard located in Seville East was planted in 1998 to shiraz, on its own rootstock. It sits about 100m above sea level on a very slight south-west facing slope. With a clay loam top soil, it is supported by heavy clay subsoil
Hand picked and sorted, mainly destemmed fruit with 40% whole bunches. Gentle pumping over initially with an ambient yeast ferment and 35 days on skins. Hand plunged. Pressed off to a mixture of old oak and one new French 300L barrel. No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered July 2016.

The highly regarded Tibooburra Vineyard is located on a hill in the south-eastern central part of the Yarra Valley, Victoria. The ‘Yellingbo’ part of the vineyard was planted in 2001 to shiraz, on its own rootstock. It sits about 240m above sea level on a south-west facing slope. With a black top soil, it is supported by yellow duplex subsoil.

Hand picked and sorted, mainly destemmed fruit with 30% whole bunches. Gentle pumping over initially with an ambient yeast ferment and 37 days on skins. Hand plunged. Pressed off to a mixture of old oak and one new French 300L barrel. No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered July 2015.

One Block 2019 Pinot Gris ‘Balnarring’

Balanced, elegant and delicious

The Mrs Nicks vineyard is located 9km from Western Port Bay and as such is influenced by the maritime airflow from the ocean. The ‘Balnarring’ block was planted in 2000 on its own rootstock. It sits about 100m above sea level on a very slight south facing slope, with a fine sandy clay loam profile.
Hand picked and sorted, whole bunch press straight to barrel. Ambient yeast ferment and 7 months in seasoned oak, with no batonnage. Settled in tank for three months before bottling.
